  
I got this recipe in New Orleans and modified it for the Pacific Northwest. Ro-Tel tomatoes are a bit spicy if you have never tried them.
Makes 4 Servings
Ingredients:
4 Tbl Olive Oil
2 10-ounce cans Ro-Tel Tomatoes and Green Chilies
2 tsp Liquid Crab Boil
¼ cup minced fresh garlic
4 ea. ½ pound skinless Paddock Fillets
1 cup water
2 Green Onions
Cajun seasoning to taste
Cooked white rice or hot French bread
Pour olive oil into a large skillet, preferably cast iron, set over medium heat. Add Ro-tel tomatoes, crab boil, garlic, and water. Bring to a boil, reduce heat to low and simmer about 20 minutes to marry flavors. Submerge the Paddock fillets in the sauce. Cover and continue to simmer for 10 to 15 minutes or until the fish cooked through. Break the fish up into large flakes, top with chopped green onions and serve with rice or hot French bread.
